Pineapple Slaw

Pineapple adds sweetness to a refreshing slaw. Pair with Cuban Style Monte Cristos.

Ingredients

  • 1/2 cup thick Greek-style plain yogurt (optional)
  • 1 2-inch piece of fresh ginger, grated
  • Salt and pepper
  • 3 tablespoons white wine vinegar
  • 1/3 cup vegetable oil
  • 1 pound slaw salad mix
  • 1 cup crushed pineapple, freshly processed or canned, no sugar added, lightly drained

Preparation

Whisk together the yogurt, ginger, salt and pepper, vinegar and oil. Place the slaw salad mix and pineapple in a large bowl and pour the dressing over top. Toss to coat. Adjust the seasonings and serve.
